Monday – Quick dinner as the food shop arrives Monday afternoons. Cook ya joint in the pressure King with a cup full of water or orangeade, controversial maybe but gives it a nice zesty flavour. Whack those spuds in the air fryer or oven & fry yo self some runny eggs just before you dish up. I would fry up some onions & peppers or do butternut squash & carrot chips instead of spuds to boost your weight loss.

Tuesday –

We call this crusty pork in our house. It’s a bit messy to make so I always rope in my step son so I don’t have to touch raw egg or raw meat (freaks me right out). Blitz wholemeal bread with a 1 tsp each of thyme, mixed herbs & garlic powder to crumbs. Dip ya loins in beaten egg & give em a shake, then dip in the breadcrumbs & bake in the oven. Dice up some spuds, I leave the skin on out of pure laziness so that’s down to you, these go in the air fryer. Serve with a baggy of microwave veggies & some gravy baby

Wednesday –

For a super easy satay curry to serve 5, mix 56g of Mayflower chinese curry powder (medium or hot) with 3 tbsp of PB2 peanut butter powder (you can buy this on Amazon, in Tk Maxx & Holland & Barrett) with 1 tsp chinese 5 spice, 1 tbsp cornflour & 600ml of water. I cooked a whole chicken in the Pressure King, shredded all the meat & put some aside for Thursday’s dinner. Fry off any veggies you want, we did onions & a stair fry veg pack, add the chicken & the sauce & cook on a medium heat till the sauce thickens. You can serve with rice, noodles, chips but we did carrot & butternut squash chips

Thursday –

This is a quick go-to recipe for me & one that I love. Get some pasta boiling away & start chopping your veggies, I did a sliced leek, baby tomatoes, spinach, & a grated courgette. Chuck all this in a pan & fry off, add your chicken which you saved yesterday till it’s all hot & cooked off. Once the pasta is cooked, add a ladle or 2 of the pasta water to the pan & squeeze in a tube of Primula light cheese. This will give you 2 massive portions or 3 regular ones. Adding cajun seasoning makes this super amazing & tasty too

Friday –

This chicken kebab marinade I get from the Two Chubby Cubs website, just google it & search on their site. There’s 2 ways of cooking this & firstly I would always recommend using chook thighs for this as boobs will dry out & no one wants that. Marinade the thighs as long as you can, an hour minimum. The quick way of doing this is to slice the thighs & fry off in a pan until the marinade goes & you get some nice char on the chook. The longer way (& tastier) is to insert 2 skewers into a spud & layer the whole thighs over the spud & create a chicken kebab tower, you’ll probably need to take a few shelves out the oven but cook it low & slow. When it’s done, you can slice the chicken right off the skewers & it is b-e-a-utiful. I served with some crinkle cut chips (crinkle cutter from Amazon) & a salad. You can stuff this chicken in a wrap or a pitta for ultimate fakeaway feels

Saturday –

Saturday night meals gotta have all the naughty feels. This was just a little bit special.

Like crusty pork, this is messy, so rope the kids in or some mug to do ya dirty work, crush Chili heatwave Doritos into a bowl, we used 4x 30g bags for 6 decent sized boobs. Dip ya boobs in egg & give em a shake & coat in Doritos crumbs. Bake them in the oven until the chook is cooked & serve. We had more chips & salad because chips are life

Sunday – I was at a meeting most of the day, so instructions were left to prep dinner for when I got home. Mash can be made in advance, so this was my husbands job. We put 2 raw eggs in to our spuds once mashed with seasoning & chives. The raw eggs make is super creamy & smooth without adding butter or milk or Syns, so give it a try! Served with the Tesco Herby bangers which are low in Syns, vegan & really bloody nice. They don’t dry out like some other veggie sausages. We serve ours with ‘magic beans’ – add some butter Fry Light & pepper & cook the beans on the hob for about 10 minutes, sounds odd I know, but makes the beans a bit extra
