Monday – Chicken boobs coated in jerk seasoning & cooked in the oven. The veggies are the star of the show here – chunky courgettes, red onions, carrots, butternut squash & peppers. Get your best tosser in the kitchen & chuck all that veg in a bowl & spray with low cal oil & balsamic vinegar & toss away. Then roast in the oven until it’s golden, a bit charred & looks a bit sticky. Wah-lah
Tuesday –

This recipe comes from the first Pinch of Nom book & is an absolute favourite in our house. I have to cook so much chicken as it’s just pure filth! To get maximum stickyness I fry in a non stick Tefal pan on a medium to high heat & let it cook off, it will look juicy & you’ll be looking at it thinking it’s never going to thicken up but be patient grasshopper, it will happen. Your time will come
You can literally serve this with a shit sandwich because nothing will compare to the chicken
Wednesday –

Jambalaya is something I started making 5 years ago when I started at Slimming World. It’s a one pot dish so super easy & cheap. You can use any meat you like, or leave it out for a veggie version.
So, in a pan, fry off a bag of frozen peppers, a bag of frozen onions & a couple of grated carrots. This week I chucken in a bag of frozen prawns (bay fishmonger cold water prawns 250g £2.55 from Tesco) 2/3 tablespoons of cajun seasoning, then once the liquid has cooked off, add in 2 packets of Sainsbury’s dried golden vegetable rice & 2 tablespoons of tomato puree, a tin of chopped tomatoes & 1 litre of chicken or vegetable stock. Let it simmer away with a lid on for 20 minutes then another 10 without the lid. Wah-lah
Thursday – Today was a simple microwave Slimming World meal from Iceland.
Friday –

We’ve had a stir fry the last few weeks so I’m officially having a break from them. Don’t worry though it won’t be forever.
Saturday – These were a bit of a treat! Tesco’s tinned lean stewed steak & gravy is VERY low in Syns & so makes an amazing pie base. To make a pasty I plopped a few spoonfuls of the cold stewed steak onto the middle of a wrap, egg washed the edges & folded in half for that authentic pasty half moon, then seal the edges & a quick egg wash on top then into the oven on about 180° for half an hour.
The tin costs £2 & in my opinion, compared with the price of lean stewing steak, as well as a having a nice thick gravy, is well worth it. I used 2 tins & made 6 pasties filled to the absolute brim with juicy meat
Sunday – Good old roast dinner. This weeks offering was a huge joint from costco which cost about £11 & served 7 of us a monumental amount of pork
